Le Perroquet 

Le Perroquet is an all-day French brasserie from Michelin-starred Chef Daniel Rose, offering classic French dishes crafted with seasonality, technique and a sense of occasion in the heart of Mayfair. It will open at The St. Regis London, Mayfair’s newest luxury destination, located at the corner of Conduit and New Bond Street.

As Head Expeditor, you will play a vital role as the bridge between the kitchen and restaurant, ensuring seamless communication, coordination and the timely delivery of every dish to the highest standards. You will be responsible for orchestrating the flow of service, maintaining consistency in food presentation, and ensuring every plate leaving the kitchen meets the expectations of the St. Regis brand. This role is ideal for a highly organised and detail‑driven individual who thrives in a fast‑paced, high‑standards environment and takes pride in delivering excellence during service.

Key Responsibilities

  • Act as the primary link between the kitchen and Front of House, ensuring clear and efficient communication during service
  • Coordinate the flow of dishes from kitchen to service, ensuring timing, accuracy and presentation standards are met
  • Monitor the quality of all food leaving the kitchen, ensuring compliance with specifications and brand standards
  • Ensure correct portioning, plating, garnishing and food presentation at all times
  • Communicate effectively with chefs and service teams during busy periods to maintain smooth operations
  • Support the Chef and management team by highlighting issues or service challenges promptly
  • Set up and maintain expediting stations, ensuring readiness before, during and after service
  • Ensure all serving stations, equipment and food storage areas are clean, organised and operational
  • Assist with food handling and service preparation when required
  • Maintain high standards of hygiene, cleanliness and food safety across the expediting area
  • Support training and guidance of junior team members to ensure consistency
  • Follow all health, safety and company procedures at all times

  • Previous experience in an expeditor, kitchen or food & beverage service role, ideally within a luxury or high‑end environment
  • Strong understanding of kitchen operations, service flow and food presentation standards
  • Excellent attention to detail and commitment to quality control
  • Ability to work efficiently under pressure in a fast‑paced environment
  • Strong organisational skills and ability to manage multiple priorities simultaneously
  • Excellent communication skills, acting as a bridge between kitchen and service teams
  • A proactive mindset, anticipating service needs and resolving issues quickly
  • Strong teamwork skills with a collaborative approach
