Product Test Engineer - Job Description

Since launching the world’s first portable wood-pellet pizza oven in 2012, Ooni has grown into an award-winning, multinational company with a product range loved by pizza makers all over the globe. Our mission has always been to design innovative products that spark joy in our customers, and whilst we’re incredibly proud of what we’ve accomplished so far - we’re only just getting started.


As part of our plans, we’re looking for a Product Test Engineer to join our product development team in Broxburn, West Lothian. The Role
This is a hands-on, technical position where you’ll take ownership of product testing across the entire development lifecycle. From early concept exploration and prototype evaluation, through full verification and production readiness, you’ll be immersed in the detail of how our products are tested, validated, and continuously improved. You will be a key member of our New Product Development team, working closely with Mechanical and Design engineers testing products throughout verification — from concept, through development, to production and beyond. You will also carry out structured testing of competitor products to benchmark performances ensuring our products exceed category‑leading standards and identify strengths and weaknesses in the market.
This is an on-site role, working 5 days per week from our office in Broxburn, West Lothian.


What you’ll do
  • Testing & Verification: Own, execute, and evolve test plans — pushing products to their limits to uncover issues early. You’ll be asked to test, break, learn, fix, repeat… and repeat again. You’ll embody our value of rigour every day.
  • Test Method Development: When existing test methods don’t go far enough, you’ll write new ones, ensuring our processes keep pace with our ambitious product roadmap.
  • Data Analysis & Insight: Analyse test data and provide clear, actionable insights for the NPD team.
  • Test Equipment Design: Design new test equipment, and either commission or build it, ensuring we can accurately test product and functional durability.
  • Regulatory Awareness: Ensure you and the wider team stay up to date on all relevant regulations, and that our developing products meet the requirements of all international markets.
  • Continuous Learning: Learn from and be supported by our excellent team, with opportunities to grow your technical and practical testing capability.

And of course… eat a LOT of pizza.


What you’ll need to succeed
This role is ideal for a technical, detail-oriented engineer who enjoys solving tough problems, thrives on testing and iteration, and brings a structured, methodical approach to documentation. You will excel in this role if you enjoy working in a fast-paced, collaborative environment where ideas move quickly and the best idea wins — no matter where it comes from. A genuine passion for tackling challenging engineering problems is essential..


Essential Skills & Experience
  • Experience in testing products and documenting results — Documentation is critical.
  • A solid theoretical foundation in core engineering principles.
  • Practical experience testing hardware products and rapid prototypes.
  • A degree, qualification or equivalent experience in Mechanical Engineering or another relevant field.
  • Excellent verbal and written communication skills, with the ability to clearly explain and present test results.
  • Comfort working in a fast‑paced environment.
  • A team‑focused, optimistic, and solution‑driven mindset.
  • The ability to work both independently and as part of a team.
  • Comfort and willingness to handle and prepare all types of food products (including dairy, gluten, meat, etc.) during testing.

Desirable Skills & Experience
  • Practical home or commercial baking experience, with an understanding of food properties like dough hydration. 
  • Experience testing electric motors, gearboxes, or power transmission systems under load. 
  • Experience with 3D modelling (SolidWorks preferred).
  • Familiarity with 3D printing and other rapid‑prototyping tools.
  • Confidence working with machine shop tools.
  • Experience with precision measurement instruments.
  • Previous lab experience.
